Harvesting wild bamboo (in winter) does not remove the plant

  There are always some roots left when harvesting wild bamboo roots, it is intended so they are able to regrow.
  
  If your issue means something else, like you don't get the Bamboo inside your inventory after a harvest please open a proper report.
